shell eggs
Or "shelled eggs". Raw eggs including the shell, as opposed to hard-boiled and peeled eggs for catering purposes.

(fresh) eggs
The distinction seems to be by customer - perhaps the text makes it clear later on whether the 'eggs' for industrial or catering use include egg products? - in which case, eggs and egg products. It might be a simple matter of 'eggs' in both cases! (SHELLED = with shells removed of course)
