Discussion

Amy Duncan (X) Mar 11, 2009:
Pensei que "stewed" fosse "ensopado" -- Acho "sautéed" uma melhor opção.
Marlene Curtis Mar 11, 2009:
Uma boa opção.
Cybeles Lehner (asker) Mar 11, 2009:
Estou pensando em usar "STEWED FOOD". O que voces acham?
Marlene Curtis Mar 9, 2009:
I agree with you Amy. Context is everything!
Amy Duncan (X) Mar 9, 2009:
However, the Collins Reverso dictionary says simply: sauté.
Amy Duncan (X) Mar 9, 2009:
My dictionary says: to stew, simmer, sauté or braise (for refogado) - how confusing is that? I think these words take on specific meanings in usage, which may even differ from culture to culture.
Marlene Curtis Mar 9, 2009:
I think we need more context here...
Bentevi Mar 9, 2009:
Have mercy! I'm on a diet here. And let's hope all this talk about food has given the asker more than just a "worked up" appetite. Let's give her time to digest all this:)
Amy Duncan (X) Mar 9, 2009:
This is fun...I love to cook! For me, braising is when you brown the meat in the pan and then cook it in its own juices. With stewing, you add more water, and vegetables and stuff.
Marlene Curtis Mar 9, 2009:
It´s confusing...Wouldn't that be stewing?
Amy Duncan (X) Mar 9, 2009:
Hmmm, I don't believe "braise" involves boiling water. Check this out from Dictionary.com:
to cook (meat, fish, or vegetables) by sautéeing in fat and then simmering slowly in very little liquid.
Marlene Curtis Mar 9, 2009:
Arroz e refogados are two different items in the context. The equipment is used for rice and braised food. It applies to vegetables, rice and braised food.
Amy Duncan (X) Mar 9, 2009:
OK, I would use the word "braise" for the meat, but not for the rice, even though Dictionary.com says you can use "braise" for meat, fish or vegetables. Well, I guess rice isn't a "vegetable," strictly speaking - it's a grain. I'd use "sautée" for rice.
Marlene Curtis Mar 9, 2009:
So do I!
Amy Duncan (X) Mar 9, 2009:
I'm getting hungry, too...I love potatoes!
Marlene Curtis Mar 9, 2009:
Braising meat takes about one hour or so, depending on how tough it is.
Marlene Curtis Mar 9, 2009:
The same applies to meat.
Marlene Curtis Mar 9, 2009:
Yes, I do. I heat some oil in my sauce pan, add the rice and some garlic, fry it slightly, add hot water and let it cook for approximately ten minutes.
Bentevi Mar 9, 2009:
But do you "braise rice" Marlene? Don't you usually braise meat? This is getting "fingerlicking good" confusing:)
Amy Duncan (X) Mar 9, 2009:
Thanks, Marlene, that's what I thought the word "refogado" meant, but the above definition seems to imply otherwise. In that case, it's definitely "sautéed."
Marlene Curtis Mar 9, 2009:
Refogados are slightly fried in oil and then boiled until cooked.
Amy Duncan (X) Mar 9, 2009:
I'm getting hungry, too...I love potatoes!
Bentevi Mar 9, 2009:
It could be just as some people do with potatoes. They parboil them and then sautee them in olive oil. Hm. I'm getting hungry:).
Amy Duncan (X) Mar 9, 2009:
Yes, but if you translates "refogados" as "boiled food(s)" in the context, then it fits perfectly.
Bentevi Mar 9, 2009:
But I agree with you that the text is kind of strange as it starts describing a boiling process and then just throws in the word "refogados" at the end...
Amy Duncan (X) Mar 9, 2009:
OK, it's all a bit murky, because you can sautée rice when it's part of another dish, but the explanation above is referring to food cooked in boiling water, which is not a sautée.
Bentevi Mar 9, 2009:
The GN container/pan can be used to cook vegetables, rice and to sauté in general...
As for sauteeing rice:

Food Indian | Arroz Refogado | Goa / Goan Portuguese Recipe | Rice ... - 13 Mar 2008 ... Delicious portuguese recipe made with chicken stock
Amy Duncan (X) Mar 9, 2009:
Continuing...you don't sautée rice, for instance, you boil it. Anything cooked in a pan with boiling water is considered "boiled."
Amy Duncan (X) Mar 9, 2009:
The explanation above is a description of boiled food. Even though one of the definitions in my dictionary is "sautéed," the above description is definitely not of sautéed food, which is usually vegetables cooked in a wok or pan with some oil.
