astronomy
The author is talking about the way the stars seem to move from east to west, since the earth rotates west to east. He likens this to being on a merry-go-round (carrossel) looking at the world moving in the opposite direction. Then he says: Se o carrossel for destapado e se olharmos para cima veremos que as nuvens parecem rodar em torno do eixo do carrossel, no sentido contrario aquele em que este gira.

Comment: "Sometimes you just need someone else to point things out to you, but yes, they're talking about removing the 'roof' of the merry-go-round, aren't they, so that we can see the sky. Thanks for the help"

uncovered
as the merry-go-round gets uncovered (just a way of saying it)

unfold
"Unfolding the merry-go-round and looking up, we...."
Unfold fala desse destapar que faz aparecer alguma coisa, que revela alguma coisa. Acho que não cabe traduzir literalmente como "take the lid off", como se destapássemos uma vasilha ou garrafa. Não há tampa, nesse caso.
Outro exemplo de uso de unfold: "There are lots of wonders to be unfolded all around".
Bom trabalho!

: Trata-se mesmo de tirar " a tampa", neste caso o tecto do carrossel.
