I think that "déroulant" is a drop-down menu (list).
I think "évolutif" means its "multi-layered" (becomes more and more detailed).

The point of 'évolutif' is that the choices on the menu will be determined by the context, i.e., are not fixed. For 'déroulant', it is sufficient to say "menu"; whether it pulls/drops down, pops up or goes sideways is irrelevant.
Windows and Unix use "context menu"; Sun and Apple use the adjectival form. Either should be OK.
