This instruction refers to the dosage of bread improvers.

Does "coulage" simply refer to the prepared dough mixture with water?

In the book Dictionnaire universel du pain by Jean-Philippe de Tonnac, the entry for COULAGE says COULAGE (eau de) - Voir EAU DE COULAGE.

Under EAU DE COULAGE, here's what it says:
Eau qui entre dans la recette du pain...Sa quantité est le plus souvent exprimée en litre pour 100 kg de farine...

Thanks, Nikki. Alison's finding in the disc. box suggests plain old "liquid" as another possibility.
