français term

Velouté de tomates et son tartare, glace basilic

français vers anglais Autre Cuisine / culinaire
I might be missing something here, obviously all words understood...but...tartar for tomato soup? is that cream of tomato? and what about the glace basilic? thanks

Discussion

RHELLER Jun 30, 2006:
note: tartare is usually served separately, so "added" is not right
Julie Barber (asker) Jun 30, 2006:
So basically it's tomato velouté with chopped raw tomato added...thanks Sue...
Dr Sue Levy (X) Jun 30, 2006:
tartare is chopped up raw tomato and glace basilic is basil ice cream.

Tomato tartare (if I had to choose I'd write it with an "e")

You need to repeat "tomato" twice to describe the tartare. I found 2 websites with "and its tartar" but they've been translated from French and probably not accurate.

Note from asker:
Fab thanks Pina. I did actually have a good look around but couldn't come up with anything that looked OK. But for my own honour I can't use 'and it's' :))

agree B D Finch : Delicious! I have noticed that the possessive is often used in French menus e.g. truite meunière et ses légumes, to indicate an accompaniement that is not made from the same ingredient. However, in this case the tartare does seem to be tomato too.

Yes, I think it is tomato or there would be a description of the tartare, i.e. "et son tartare de...". But "et son/ses" definitely means it is an accompaniment. Cheers!
