I think what the sentence in the context means is "there are several processing options depending on the way the unit for the processing is chosen/taken".
It seems to me it's about the volume of the material or number of something referred to as unit(単位）; and then, depending on how one chooses to specify "unit" or to determine what is going to be that "unit" for the manufaturing(?) process, one of several option of workflow or operation can be chosen. At least this is the notion I get from 「加工の単位のとり方によって、色々な工程が考えられる」.
