I guess as a semi-practicing vegetarian, my knowledge of butcher and sausage terminology is severely limited. Does this mean that the sausages have bladder casings ? mm...

if I understand it correctly, the series of sausages is
"....headed every year anew, by the inflated pig bladder"

The Bladder can be used for certain \"Delicatessen\", like \"Haselhuhn mit Schnecken in der Schweinsblase\", but is not commonly used for sausages per se (afaik) - gut is more common for that purpose. (btw: Remember chancellor Helmut Kohl serving \"Saumagen\" to his Guests? Yummy;-)
