This is probably the table just before the dishwasher where food scraps are wiped off the crockery and cutlery before they are placed in the baskets that run through the dishwasher.

TRIVIA
I worked on one of these dishwashing lines on a holiday job at Trentham Gardens in Staffordshire - it is no fun - but we did get to see Rod Stewart and Emerson, Lake and Palmer in concert through the kitchen door to the great hall, which was right next to the end of the dishwasher!
