Authentic Jamaican Jerk Chicken

Yield: 6 servings
Ingredients:
· 2 chickens (approximately 3½ pounds each) cut into serving pieces
· 1½ cups Jerk Marinade
Method:
Rub the chicken with the marinade and marinate in the refrigerator for at least 4 hours.
For authentic flavor, build a fire in the grill with a combination of coals and allspice (pimento) wood. If you don't have allspice wood, substitute apple wood or hickory, or build a fire with charcoal.
Place the chicken pieces on the grill over white hot coals, skin side down. This will grease the grill and prevent the chicken from sticking. Baste frequently and turn the chicken every 10 minutes or so.
Over a slow fire, which is preferred, the chicken will cook in approximately 1½ to 2 hours. Over a hotter grill, the chicken will take 30 to 40 minutes. The chicken is done when the flesh feels firm and the juices run clear when the meat is pricked with a fork.

Mivel ez ételféleség és Magyarországon nem ismert módon készítik el, bátran adhatsz neki olyan nevet, ami jellemző vagy az ízre, vagy az elkészítési módra. A fűszeres is lényeges, és ha fontosnak tartod, akkor azt is hozzáadhatod. Sokan nem tudják, hogy milyen ételkészítési módszer a "jerking". Alább megadtam.
"JERK: This method of cooking pork and chicken dates back to the Carib-Arawak Indians who inhabited Jamaica. After capturing an animal and thoroughly cleaning and gutting it, the Indians placed it in a deep pit lined with stones and covered with green wood, which, when burned, would smoke heavily and add to the flavor. But first, the carcass was "jerked" with a sharp object to make holes, which were stuffed with a variety of spices. The holes also allowed heat to escape without loss of moisture.
The results were superb. The meat was not only wonderfully spiced, but moist and tender."

Elvitatkozhatnánk, hogy melyik a helyes: lyuggatott, tűzdelt, pácolt, fűszeres vagy más. Olyan étel nevéről van szó, amelyet nálunk nem csinálnak rendszeresen. Ha megvan a recept is az eredetiben, akkor el lehet dönteni, hogy megszúrkálják-e vagy sem, tehát lyuggatott-e vagy sem. Ha az eredetiben az ősi jamaicai elkészítési módot írják le, akkor biztos, hogy lyuggatott. Ha az alaszkaiak által készített jamaica jerk chickenről van szó, akkor nem lyuggatott, és nem is igen fűszeres. Az ételnevek alkotásánál nem mindig a nyelvi pontosság az irányadó. Olyan nevet kell az ételnek adni, ami felkelti az étkezni kívánók érdeklődését, mert akkor nagyobb a valószínűsége, hogy megkóstolják. A szurkált csirke lehet, hogy hivatalosabban hangzik, de nem érdekesebb. Ha a rátóti vendéglőbe mentek, akkor az étlapon néha van "pöcsmácsik" is, ami ott természetes és figyelemfelkeltő neve a mákosnudlinak. Van buggyantott tojásunk, ököruszálylevesünk, ördögpirulánk, haramiapecsenyénk stb. és a tojás nem éppen buggyantott, az ökörnek nincs uszálya, az ördögpirulában sem ördög, sem pirula, a haramipecsenyét a rendőrök is eszik. : Az eredetét nem ismerem, de ma már nincsenek benne lyukak. Pácot is lehet vásárolni, jerky sauce néven és az nem lyukakat tartalmaz. ;o) A lyuk az vicc volt! A szurkált nem lyuggatott. Úgy hiszem itt inkább a füszer a sajátosság, nem az eljárás.

Kedves Éva! A pác nem tartalmaz lyukakat. A csirkét szurkálják meg, hogy lyukak legyenek benne és abba beletömködik a fűszert. A lyukak láthatóak, már ettem ilyen ételt Jamaicában. Természetesen ha úgy csinálják mint a dánok a gulyást, akkor lyukmentes.
